This Wush Wush lot was produced by Finca Monteverde in Colombia's center-west Tolima department. Monteverde has become synonymous with the Wush Wush varietal. Located at 1750-1850 meters above sea level in the Andes, Monteverde has been in the Gutiérrez family for six generations. In 2010, fifth generation Johan, Newerly, and Katerinne convinced their parents to start growing exotic varietals, and the rest is history.
The Wush Wush varietal is a landrace variety selected from the mountain forests of Ethiopia's Kaffa region. Coffee is native to Ethiopia. Thousands of landrace varietals are thought to grow there. Wush Wush was originally selected for its resistance to disease. Only later was it recognized to have a very special and exotic cup profile and high cup quality potential.
This is a washed processed lot. After sorting out only the ripest coffee cherries for processing, the coffee sits and begins to ferment in jute sacks for 24 hours. The coffee is then pulped and is returned to dry jute sacks for another 24 hours before being washed. The coffee then dries on raised beds for 3 days and finishes drying using a mechanical silo over the course of 4 days.
