This lot comes to us from the San Lucas Zoquiapam community in Oaxaca, Mexico. It is a hard-to-reach, lushly forested mountainous region with a dense fog layer and impressive biodiversity. Producers take great care of the forest and use native trees to shade their coffee.
Unlike other growing areas in Mexico, there are a lot of young farmers in Zoquiapam. They view the coffee business favorably and want to contribute to their ancestral craft and exercise passed down techniques. Because production in the area is small, and the area is so remote, harvest is carried out by families and neighbors.
Producers do their own processing. Typical method involves de-pulping the coffee, and then fermenting in open, wooden tanks for 18-24 hours before drying on raised beds for 6-10 days.
